Es Cendol – Indonesian Drink

Cendol Ingredients (Green bubbles)

  • 50-gram rice flour (Indonesian: tepung beras)
  • 50-gram tapioca flour (Indonesian: tepung sagu)
  • 1/2 teaspoon salt
  • 750 ml water
  • 4 tablespoons pandan extract (green colour)

✩ Method

  • Place the cold water and ice cubes in a bowl. A colander is used to make the cendol. It applies to squeeze the cendol dough. Set aside. – Turn on the heat, combine all cendol ingredients in a sauce pot, and stir until mixed well
  • Cook and stir at all time, until it releases bubble, and thickened (imagine boiling mud)
  • Turn off the heat, transfer the thickened cendol dough to a colander
  • Hold the colander above the (bowl that contains cold water and ice cubes).
  • Then use a spatula to push and squeeze the batter through coliander. The batter requires to drop directly into the cold water, which will ultimately make the cendol form hardened and hold its shape. Set aside. •

✩Coconut milk ingredients

  • 400 ml organic coconut milk
  • 2 or 3 pandan leaves
  • Pinch of salt
  • (Method: boil the ingredients above for 2-4 minutes, and pour into a clean bowl or jar)

✩ Palm sugar syrup

  • 100 organic coconut palm sugar
  • 100 ml water
  • Pinch of salt
  • (Method: place all the ingredients above in a saucepan. Cook and boil until all the sugar dissolved. Then pour into a clean jar)

✩ Finally, prepare two glasses to serve. Add some ice cubes, pour the cendol bubbles, then add the coconut milk, and drizzle with palm sugar syrup, enjoy!
