Vegan Banana and Blueberry Muffins

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 tablespoon baking soda
  • 1/2 cup sugar
  • 1/2 cup vegan butter (melted)
  • 1 tablespoon white vinegar
  • 1 teaspoon vanila extract
  • 1/2 cup almond milk
  • A punnet of raspberry
  • 2x banana

Method:

  1. Preheat your oven
  2. Prepare a muffin cup tin, place the muffin baking paper and grease with some butter or spray with some oil
  3. In a small bowl, mash the bananas until they are soft and a little lumpy
  4. In a medium bowl, mix the dry ingredients such as flour, baking soda, and sugar. Combine these ingredients well
  5. In the same bowl as above, pour the wet ingredients such as butter, vinegar, vanilla extract, almond milk, blueberries, and mashed bananas. Whisk well before using a hand mixer
  6. Use a hand mixer to mix the dry and wet ingredients for a minute until they form a batter. However, don’t over mix. We only need to stir gently until it combines. *If you don’t have a hand mixer, it is ok, just use a spoon, and mix the batter well
  7. Finally, spoon the batter into your muffin baking paper. This batter will make enough approximately 12 muffins
  8. Bake the muffins. My oven is fan-forced, so the temperature will be 160C, bake for 25-30 minutes. But for a non-fan-forced oven, it will be 180C, bake for 25 minutes
  9. The muffins are well cooked and ready when they smell nice, and when you insert a toothpick into a muffin, it comes out clean.
  10. Place onto a cooling tray before eating. Enjoy!
