Thumbprint Cookies (Strawberry Jam)

Ingredients

  • 1 cup Nutelex (Vegan butter)
  • 1/2 cup raw sugar
  • 1/2 tsp vanilla extract
  • 2 Cups plain flour
  • 1/4 cup strawberry jam (more or less, we need a teaspoon for each cookies)
  • Desiccated coconut for the topping

Method:

1. In a medium bowl, add the vegan butter and raw sugar, plain flour and vanila extract together

2. Mix the ingredients above until they form sticky dough

3. On a baking paper, use the dough to form small balls, approxemately making 15-18 cookies

5. If the cookie dough ball cracks, fix it and shape smoothly with your hand, and make them like the picture above

4. Use your tumb to press each cookie dough ball in the middle to create tumb prints

6. Let it sit on your fridge for 10 minutes, to cool down the dough before baking

7. Preheat your oven to 160C with a fan-forced for 25 minutes and 180C with a fan-forced for 15-20 minutes

8. Pre-heat your oven. My oven is a fan forced oven, so the temperature will be 160C for 25 minutes. But for a non-fan-forced oven, it should be 180C for 15-20 minutes

9. Place in cooling tray before sprinkling it with more coconut

10. Viola, ready to eat😊
